Shield Wall. Once the Knights hit that the numerous spartans behind would have their own spears ready to plunge into the Knight. Knights are good but melee is almost useless against a phalanx.
They had a pneumatic launcher throw a spear at a chain hauberk like they used to make in Norway around the year 800, and it didn't pierce it. Also, the knights have shields too, and you're losing more spear points all the time.
Oh. Templar Knights are godly. Yeah, they'd probably beat a Spartan in a fight.

No, there aren't 'many' gaps. This is hyperbole. The very point of plate armor is that its the ultimate defense against bladed weapons. It is very well protected. Obviously, there is an opening for the neck, but thats what the helmet is for. The armpit? Hard to reach spot , and there will be maille worn underneath the armor anyway.
Knights were by far the best grounded melee soldiers ever produced.
