I highly doubt that zombie ate the whole body bones and all. I'm guessing Carol is still alive and somehow stumbled across Lori and saved her using the lessons she learned while practicing the procedure on Zombies. Carl probably didn't shoot his mother.

He did eat Lori and was confirmed in the Talking Dead segment. We even see brown hair in his hands in mouth which were Lori's. What the director of the episode said was that the zombie dragged Lori over into the corner and ate her. The host got upset upon hearing the news.

Can't blame him for eating Lori.

It would have been funny if Rick cut him open and Lori's head rolled out, completely intact and recognizable.

Then kiss it and say, "I'll never let anyone hurt you".
