In my defense, i said that before there was any actual indication that Asami x Korra was a thing. I didn't get on board with the idea until there was evidence (Korra only writing Asami, and blushing when Asami complemented her hair) to support it; until then it was all just typical shit fans do with characters from any story.
Also, i believe my annoyance with it was tied to seeing so much goddamn fanart over the years of characters being portrayed in homosexual relationships when the author didn't come close to hinting at it.

One thing I was hoping would happen, but didn't happen, was Kuvira getting punished by the spirits for ****ing up the vines. The second she went into the spirit wilds I was thinking "aww yeah, she's about to get vined" but then it never happened. Disappointing. I feel like Kuvira got off way too easy for all she did and tried to do. If the spirits had done her in, we could have seen her get her due without Korra compromising her newfound principles of mercy and forgiveness.
Oh yeah, and it was ****ing bullshit that Korra only tries to energy bend the spirit cannon's blast when Kuvira's life is on the line. Not her friends'. Not the people of Republic City.
Anyway those are my complaints. Loved it otherwise.
I liked Kuvira's defeat. It was done not through beating her to submission (though there was plenty of that too), but through Korra becoming the mediator she was supposed to be and really capping off how much she has grown as a character. Kuvira is the first big bad who wasn't defeated through force of arms (it could have been done, but ultimately Kuvira never would have given up otherwise). I also don't really think Kuvira got off too easy. Sure, she's still alive, but now she's been abandoned by anyone she ever cared about (Baatar Jr., Suyin), and will likely spend the rest of her days alone and behind bars. In that regard she is similar to Azula, just more sane and less sympathetic. This is a particularly horrible punishment for her because of her abandonment issues. Suyin's final line is a cold, dismissive promise that Kuvira will pay for all of her crimes, meaning that her mother figure has essentially abandoned her as well. I personally am more bothered by Baatar Jr. being treated far more kindly.
I totally get what you mean by Korra only trying to energy bend the spirit cannon's blast for Kuvira, but to be fair there was always the notion that her friends might be able to escape the blast (and they did). Also, she was in no position to even attempt energy bending a lot of the other blasts. She was simply too far away. Kuvira's impending demise might have been the only time she was in close enough proximity to try it (except for a few times in the air).
