I'd say, under that stipulation, Wolverine can win it. Even if Thor could one shot Wolverine with a good punch (iffy), Wolverine can certainly one-shot Thor with a good stab - meaning it'd come down to who can land that hit first, and Logan's faster and more skilled.

Logan is not more skilled and not faster. Thors been fighting for centuries. A 100t punch only iffy to knock out wolverine???
His skull will stay in tact his brain will be mushed by the g-forces.

Wolverine has a track record of fighting guys like Thing, Hulk, Wendigo, etc all in the 100 or over range and not being one-shotted not that there not capable of it.
He's a God. He has withstood all manner of attacks. It remains to be seen if cutting, chopping or stabbing would even have the desired effect on him.
Up until now, it has been a very small number of things that have actually been able to cause visible damage.
And, of course, we all know what he can do to Logan.
