How would this go down?

Thanos + IG.

Wasn't there an Elseworlds where Doom with the IG beat the entire Celestial Race after millions of years of non-stop combat?

Yeah, BUT that was Doom+Infinity Gauntlet+The Beyonders Power; at the conclusion, the Gems were shattered and most of The Beyonders power was burned out...

Now I know What If's arent cannon, but since that is my only reference point for this thread, I am picking the Celestial Race to win; they take heavy casualties, but eventually defeat Thanos...

Edit: And it wasnt millions of years of nonstop combat, but 400+ years if I remember correctly...

Stupid Else-Worlds aside, I don't see how Thanos wouldn't just causally erase the Celestials from existence the same way the Abstracts were.

This is like an army of ants taking on a steamroller, they've got numbers but little else going for them.
