Thanos wins easily (if we exclude Scathan).
Reed Richards, Dr. Doom, and the other members of Illuminati simply don't possess the required abstract levels of intelligence to ascend into full omnipotence while wearing the Gauntlet. Thanos and Adam Warlock, however, do. This much is obvious when one compares the original Infinity Gauntlet saga with the more recent Illuminati/FF stories.
Lolwut? The current IG sagas consist of a nerfed version of the original gems. And let's not go overboard with Starlin-lite nuthuggery under the guise of preference for Starlin-pets like Warlock and Thanos. Doom has had plently of instances of wielding godlike power to full effect on his own, while Reed has used his personal tech to save universes and fix suns while working with the COR. Not to mention that his son is pretty much a god in his own right.

A host was able to fight Doom for quite a while when he had the IG and Beyonder's power. All the Celestials would curbstomp current IG. Imagine Eson just falling out of the sky Hulk stomping Thanos, and then Arishem dropkicks him while TOAA clotheslines him over the top ropes.

On the subsequent page, the 'chief nerd' scolds them both with the following...

The point of that scene was to show us that just because something may not fit into continuity doesn't mean it should be overlooked/ignored. The chief nerd explained that as well in the first scan...
"Continuity! When I was growing up, if fans found a conflict in continuity they didn't try to trash it or tear it down! They looked at ALL the pieces and tried to come up with a solution!"
