What was stopping him from waiting until twilight and taking on the dragons at their weakest and not going in at the dead of night when they were at the peak thereby making his chance of success effectively zero? Answer: His idiocy, selfishness, rage and suicidal tendencies.

Cos his record of acting irrational is extensive:
-He rolls up to a castle of refugees and bullies his way in with threats.
-He forces men to join his army.
-Tries killing someone who disagrees with him.
-Uses people as bait to kill a female dragon, which he then states is overall worthless to his cause.
-Belittles a group of people because they celebrate the first bit of good news they've had in decades, people he's trying to use.
-Doesn't listen to the one sensible guy.
-Leads men to their deaths.
-Takes the path that has absolute ZERO chance of survival.
