Beast was a side-character, at best, and Mystique was important to the plot but she's a villain, not an X-man. And was only slightly more developed (where'd she learn to fight like that, again?) The only people given focus were Xavier, Erik, Raven and Logan. That's piss poor for a film about a team.
I'd say Beast had a pretty decent role tbh. His initial encounter with Logan and his saving of Mystique from Magneto were definitely key moments in the film. He was also shown to be Xavier's right hand man, and his super intelligence proved to be helpful a few times.
The actual "X-Men" on the 1973 team only consisted of Charles, Logan and Hank. And I honestly think they all got their fair share.
Then you have Quicksilver. Even though he only had a few scenes and isn't officially one of the X-Men yet, he was clearly the big highlight of the movie in terms of introduction of new mutants and mutant powers.
But yeah I agree with you that in the future scenes the only main character was Prof. X really, but with Kitty and Logan obviously being involved in the main plot. The rest of them were all just defending him, Logan and Kitty. But I honestly thought it was cool having lots of different mutants using their powers to fight off the sentinels, without having to give us a backstory and character arc for each one of them.
