Honestly, I don't see a sonic boom with the gif that you put. Just a blur.
I didn't say that sonic booms were produced by strength. But shockwaves can be produced by impact instead of just velocity. This is pure common sense. And maybe I'm wrong, but IIRC, their punches were producing shockwaves upon impact instead of upon throwing the punch.

I can tell they were meant to be sonic booms because every time superman went to supersonic speed in the movie it was shown as that effect.

You need glasses, they were sonic booms as shown in the flight of superman earlier in the film. To quote Nemebro "you're an idiot".
There were shockwaves when their punches hit, therefore it was shockwaves made by the impact. Not once did you see a sonic boom created just by swinging a punch. IF that was true, we should have heard it, a big "BOOM" should have sounded because that's what happens with a sonic boom. Now show me where an actual boom is heard after the kryptonians swing a punch and I'll believe you.

We have not seen them use superspeed in any complex maneuvers, like zig zagging through obstacles, ducking/dodging multiple bullets, stringing together multiple punch combos, etc.

So, unless your looking for Anime styled DBZ like speed, you'd be hard pressed to define super speed in any meaningful way. you know, things like weight, inertia, velocity and other things all still play a role.
In fact, if you consider, the only time she slows down is when the impacts actually occur, not when she is swinging the punches. These are actually more consistent with actual definitions of how super speed would actually work, rather than the near weightless impacts and physics seen in anime portrayals.
