Actually it's more than likely because Thor was shown to be the most powerful of the Avengers, basically quan is trying his best to downplay all of Thor's feats so that he'll have an easier time defending Thanos when he finally shows up.

It's not bias to say that the more skilled and faster fighter has the edge, especially when sed fighter also has ranged attacks and can fly.

Thor holding back isn't based on "little evidence", we see the AOE damage Thor can do with just a hammer swing and it's safe to say Thor, the self labeled "protector of Earth/humanity", wouldn't attack with something that would have killed everyone on the ship save Iron Man, the Hulk and possibility Captain America.

I've seen plenty of Thor fanboys. And merely admitting said character loses against a superior foe does not mean one is not a fanboy. I'm a Superman fanboy but I admit he loses against certain characters after all.
