I disagree. There are other things he says that contradict your position:
"You shouldn't grimace before you lunge. It gives away the game."
A lunge is definitely not a parry.
The growling she does at 1:52 as she goes to strike him is telling that she's fighting with all her might and fury.
I agree with you, that after Jaime says, ""Bit of a quandary for you, If you kill me, you fail lady Stark", she fights much more defensively. She fights less ragey and more defensive, basically.
Also, the show fight fits with the book a lot better than I thought it originally did. He really does give her a run for her money until he gets tuckered out, just like the books. The difference, though, she really really really gets the best of him in the show, towards the end of the fight.
