It was no comparison to the Mace fight at all.
Maul was doing his very best just to hold his own in Sabers, whilst Mace actually overpowered Sidious in Sabers.
Maul was being tossed around pretty easily by Sidious. He was never able to do anything even close to that to Mace.

This is Sidious teaching Maul, though. This doesn't mean it applies to Sidious, he's so powerful and so fast he can afford to have some fun. Maul is skilled, but not skilled enough to toy with people like Sidious.
Sidious was giving him some advice, some advice that Maul ignored which got him bisected.
Remember, Sidious is actually good enough to toy around with people.

But also logically speaking Mace won't be force chucking Maul all over the place.
And because even in Sabers Maul likely has the strength to compete with Windu who in turn has strength enough to compete with Sidious, but that'll still leave too large a gap between Sidious and Maul.
