Regardless of whose stronger, I would at least like to see the extent to which Beerus can use UI for the sake of the long awaited rematch after the tournament.

Vegeta has been one shot by Beerus who wasn't even full powered. Yes to all of the above for Beerus. Also Vegeta has never felt Beerus at full power.
Also Jiren didn't tank any punches, Vegeta wasn't hitting Jiren. Jiren has that aura that bounces stuff off that Vegeta pounded on as red energy flew off with each hit.
I think the key to besting Jiren is he's defenseless when he attacks. Cause the two times Vegeta got a hit on him were in the middle of him striking at Vegeta.
So I'll just predict the next several shows in advance:

Will it make a difference in their tag team against Jiren? Will they have to fuse? Maybe even Vegeta unlocking UI anyway because DBS is predictable af?

I doubt we'll ever see the duo fuse again, tbh. At this point they're both too wrapped up in their own individual progression(s) to ever entertain the idea of fusion, imo.

I prefer individual progression for any characters over fusions anyway, though I suppose Kefla happening and preventing the meltdown that a SSJ3 Caulifla would've caused (at this time) was a silver lining...
