Assuming the Broly movie is actually part of manga canon, do you think there's any truth to Goku's statement that Broly was stronger then Beerus?

He said probably stronger. Like what Gohan said about Cell Max though, doesnt mean jack shit in the end. Just another line made to stir speculation.

Based on how nonchalant Beerus was in the Broly film though and around Broly in general like in Super Hero, is easy to say he wasnt that impressed by him.

Hell no.

Broly's power was eclipsed during the Moro arc, and even Gas/Granolah were only transformed into the strongest beings in the universe "apart from the Gods themselves." So far as we know, Beerus still sits above everyone.

The thought had occurred to me. Goku being a misread prophecy to beating Beerus would be hilarious.

That sadly was still the best part of Super Hero, imo at least. I liked it personally, but pretty much everything else about the film, major disappointment.

Orange Piccolo might end up looking better in manga or anime.

Well, you asked about manga canon... And manga canon has gone out of its way to randomly wank the shit out of Beerus -- especially with the reveal of his 'perfected' Ultra Ego technique(which seems to be a Destroyer's equivalent of an Angel's Ultra Instinct.)

But also per the manga, we know that Broly's power was surpassed [by a huge margin] during the Moro arc...

-Goku states that Moro-73 was the strongest being he had fought up to that point(and he had already fought Broly.)
-Then MUI Goku stomps the absolute christ out of Moro-73 without any discernible effort.
-Then Beerus was fully prepared to step in and destroy a far more powerful version of Moro(ie. with Merus absorbed), as though he was just a minor annoyance.
-Then right after the Moro arc, Whis(who knows about Broly and has seen him in action) states that he isn't aware of any beings in the universe who were more powerful than Goku and Vegeta -- implying that they had each surpassed Broly as well, yet were still shown/implied to be vastly inferior to Beerus.
-Then Granolah and Gas were transformed into the strongest beings in the universe "apart from the Gods themselves" -- implying that the Dragon couldn't make them more powerful than the likes of Beerus.

tl;dr
Goku has absolutely NO clue what Beerus is truly capable of, therefore his thoughts on the matter are pretty much worthless. In all likelihood, we've never seen Beerus come remotely close to using his full power against anyone so far.

But didn't Goku technically see Beerus fighting all out in the Exhibition Match?

Even though I don't think Saitama would stand any sort of chance against Goku, that was still really well done!

Beerus was clearly better than the other GoDs in that exhibition match, so wouldnt say he went all out there.

It may have seemed to Goku that Beerus was going all-out during the Exhibition Match(because Goku had never seen him fight like that before), but with all the lowkey 'upgrades' Beerus has gotten since then, he probably wasn't.

And aside from the fact that killing was forbidden per the Tournament rules, it's also unlikely that the Destroyers would have actually been trying to kill one another in general, due to the repercussions that would've had to their universes. Incapacitate, yes... But kill? Very doubtful.

So yeah, with all of that considered, it's very likely that Beerus(who was clearly the most powerful Destroyer on the field) was still holding back to some extent... Probably a lot, since many of the other Destroyers almost seemed like fodder in comparison. For example, even when several Destroyers attacked Beerus at the same time, they still couldn't beat him.

Makes sense.

All this Dragon Ball talk has me in the mood for digging out Xenoverse One. You eventually get to the BOTG Goku/Beerus fight, right?

Kind of dropped the game because I have no idea what I'm doing, and found obscure Munchkin building of clothes plus weight plus arcane grinds towards upgrades plus melee and ki blasting being unable to co-exist as viable options in one build a big turnoff.

I just want to kick ass with Big Mac and level up naturally in story mode, not need MMORPG preparation and grinding.

If it were any other character then Beerus, I would probably argue it. But what you guys are saying does make sense in his case.
