There's many quotes stating Yoda easily handled Dooku's lightning, for one.
And for two, Valkorion isn't restricted by Plagueis' "most powerful Sith" quote.
Valkorion isn't a Sith. He was a Sith as Tenebrae and Vitiate, but no longer. KOTFE made that explicit.
He's a "Sith entity" because he became incorporeal as a Sith and via Sith means, but that doesn't still make him a Sith.
Being a Sith isn't a sign-up for life type of deal. Valkorion's as Sith as SoR Revan is Sith: not a Sith.
