But he didn't die... And it wasn't from losing fingers, it was from losing his ring, into which he poured most of his power. and that was done by Narsil, a powerful Numenorean artifact.

Why would Sauron reach for the Night King? The only reason would be to do what he did to Gil Gilad, and burn the night king from the inside out. That was what he was going to do with Isildur when the man used the shard of Narsil reflexively to slash the fingers off of Sauron.
Also, the Night King's ice sword is no Narsil 😛

Asuming he did he would get his finger cut off and then sent to the tower to serve as a Huge Red Eye hahaha.
An ice sword isnt a common sword neither.
