I get it's his signature ability, the Force Lightning, but the prequels acknowledge him master of the saber which they could've applied. Don't give a **** if that puts Rey in a tough spot.

I'm also sure Samuel Jackson never expressed how he totally would jump on the opportunity to be Windu again. Nope. Never.
We know Palpatine can stop his force lightning because he stopped it against Windu.
But ill give him the benefit of the doubt here and assume (like against Windu), that was his only defence against Reys Lightsabers.
That said I dont trust the writers of this trash to have thought that through.

It was a family heirloom for him. Rey has no relation to that Saber at all. But for some reason it called to her.

It's got nothing to do with that.
Disney could afford for these Male actors to be in that scene - but it doesn't fit their Agenda.
They want the males talking to Rey - not fighting with her.
They want the Whamen to take out Palpatine all by herself.
Even Qui-Gon's voice says, "We're right behind you, Rey."
- As in, the men are all behind her - and she is leading them.
It's all about the Agenda.
That's why I keep saying - if you want to see a Luke Skywalker movie/series or a Vos movie/series - you gotta boycott Disney.
If you don't boycott Disney - you just see more of the feminist Agenda. That's it.

Palpatine stopped firing though against Windu.. But that might have been to feign weakness in front of Anakin..
In any case at that time he was lying on his ass and so his Lightning was literally his only defence from the second most powerful Jedi chopping his head off.
I could give him the benefit of the doubt here and assume he has no Saber to defend himself from Reys Sabers id she gets close.. But honestly I dont trust the writers of this crap feat one bit to have thought it through.
