It's unlike his previous versions... But considering we saw him two-saber combating in the Clone Wars series, that means he doesn't really have a standard technique, but can switch from single saber, double saber and two saber combat.
He was fighting two people, it makes sense for him to bring two sabers to such a duel especially since it was established earlier that he had two. I'm sure Sidious is skilled with a double bladed lightsaber considering he trained Maul and comments made by Nick Gillard, but it still makes little sense for him to use one when it has been previously established he prefers normal sabers instead. It's just another example of Disney's laissezfaire attitude while creating these films.
But who knows, maybe Rey isn't possessed by Sheev.

Hmmmm.... I don't think Palpatine 'needed' to use two lightsabers. Although we have seen cases where single-saber users need a second one when fighting multiple opponents, I don't think Sidious is the case.
I don't think Ray will be possessed, personally.
