The original word "yom" is not always used for a specific day being a 24 hour period. It is more like a "period of time" poetically referred to as a "yom." Similar to how we say "period" in English to mean one hour. Such as "I have chemistry in my first period."
Then there's the poetic take that makes each day symbolic of creation "phases."
