To be fair he did do a lot better than current MUI Goku.
MUI Goku effortlessly trounced the Granolah fractal/illusion. The 'real' Granolah only took Goku out by delivering a cheapshot while he was unprepared(akin to when Sorbet used the ring lazer back in RoF.) Point being, we don't know how a true battle between them would have played out, but I assume that Goku would have done very well. /shrug

The entire point of UI is that you can't get a cheapshot in, his body reacts regardless of what he wants, granola got that hit in, because his body couldn't react fast enough

The point of UI is auto-reflexes. Beerus proved it worked even if they attack your blind side.
So Granola out reacted Goku, while UI was activated.

But again, Granolah...the most powerful guy in the universe...still had to wait for an opening to appear, and even then he still resorted to a cheapshot to take Goku out(and cheapshots have historically been his kryptonite in DBS.)
In a proper fight between MUI Goku and Granolah, I think we would have gotten essentially the same thing we got with UE Vegeta vs. Granolah. ie. Goku stomps Granolah initially, then Goku's stamina starts depleting, then Gralonah surpasses his wall and beats Goku down. /shrug
