Neither did Sarutobi. Both had a huge array of jutsu that wasn't shown. But we've never seen Oro use jutsu much. Something always stops him. Like not having arms, or not trying. If Oro and Saru had both been one-on-one that battle could have been awesome with all the jutsu they know.
He did use a bunch against 4-tails.

It could be three things actually. Or 4 depending on the circumstances. Though it's not directly stated anywhere, Orochimaru could have also wanted new bodies not just for immortality, but for their chakra affinities as well. If he wants to master all the jutsu out there he would need to have affinities for them and he's never seen using Katon(or Raiton for that matter). Sasuke with a young healthy body, amazing eyes, and two natures Orochimaru has never been seen using, would probably be the best Christmas present ever.
But that's a stretch I know. Orochimaru has never commented on it, or at least I don't remember him doing so.

The Totsuka sword is essentially a watered down version of the Death God, minus the huge price, so I think Itachi (and perhaps Sasuke, if his Susano'o gets the Sword) would be able to beat them. Madara could warp them away like Kakashi would with Kamui, though yeah, he'd be vulnerable. Kisame could likely drain their chakra with his Samehada. Konan could trap them with her Paper Angel Tech.

Still, it's like a half-dozen in fairly short order with a variety of uses. In terms of number of jutsu I think only Kakashi and Jiraiya and Pain have shown as many on screen.
For combat, he does definitely seem to prefer the snake ones. Maybe he's just more comfortable with them? Outside of anime-only ones, he's only used elemental techniques once even, a wind release in the forest of death.

I think studying jutsu might be in large part to use them as a tool to enlightenment and power on a more theoretical level- the more he knows the more he understands of their base principles and how they affect the world, and from there he can apply those principles to his own research and new higher level techniques.
Perhaps if he finds an interesting jutsu, he might just make his own snake-varient to it instead of using it directly.
