Jedi are as fast and as agile as Spidey when they want to be. Just think of Yoda. Would you really think that he had the speed to do acrobatics like he does in 2?

Darth Vader is the most powerful being. If he senses no real danger, then he will simply not move to make up for it. Expending energy needlessly to fight to your fullest, means that people will be aware of fully how powerful you are. Hence the reason to appear as less than you truly is.

And back in the Old Trilogy fights had to be slow because if they were really fast the lightsabers would break,seeing as they were made with less durability than a chocolate chip cookie in milk.
