The shows/movies have to have a happy ending, but if written correctly, the Borg would easily conquer every planet in the Federation.
Yeah, and if written correctly, the Empire would have beaten the shit out of the rebels. Their existence is fiction, so I don't see why the methods used to beat them are suddenly of no real consequence in a debate like this.
Besides, even when you consider how they're written, their strengths and weakness' vary from one story to the next.
This is why I don't usually get involved in a debate of this nature, becuase there is no consistant description of the capabilities of fictional characters in situations like these.

Then it could be said that the Federation would win over the Empire regardless of "fictional might" simply because they'd be the "good guys" in the battle.

I like Star Wars, A LOT! So, I've been selective in the Expanded Universe materials I read, because I don't want to take away from my ability to imagine the characters in situations that make sense to me.
Star Wars is mythological to me, a work of fantasy. Crap (imo) like the Vong novels, just turns it into another sci-fi, craptastic, personality-lacking drama; which is of no interest to me.

In "First Contact", Data was a target.
I remember the episode that you were referring to as well. There is more than one episode that Data is directly interacting with the Borg, meaning that that one episode that you are referring to is just simply for entertainment......"GASP!!!!
