He wanted to be taken prisoner. He had several chances to kill Anakin. Dooku didn't expect Anakin, as a Jedi, to kill him in brutality but take him prisoner.

That, and Sidious was supposed to stop Anakin if things went wrong, which Sidious obviously wasn't planning on doing.
