I'm also curious as to why hitting a depowered Thor once is more impressive than actually defeating the Hulk. And why it is so much more important that it jumps from average to high.

Both Bruces and Steves routine feats display them showcasing inhuman strength, speed, endurance, etc. it does not matter that Bruce isnt classified as metahuman. Look at his feats.....most impressive peak human resume overall.
