I'd go with The Wheel of Time over either two if you haven't yet read it; it's a [soon to be] 14 book epic that beats out The Lord of the Rings, The Dark Tower, A Song of Ice and Fire, The Sword of Truth, The Realm of the Elderlings and just about any Fantasy series out there.
I've read WoT and the first five books were superb.
However, the rest of the series (except for maybe 9) until Sanderson took over slowed down the plot to a snail's pace, and became full of essentially unnecessary filler.
Jordan took Tolkien to the next level and described everything he saw with as much description as possible. That isn't necessarily a great approach. Tolkien and other writers have a lot of description, but they allow room for their readers to imagine as well. And Tolkien's masterpiece was always about the world he had created, and the man breathed life into it to add to its wonder and magical nature. He didn't spend pages on a woman's dress.
I think if Jordan had finished WoT in seven books, the series would have been the best. As it turns out, the way the story (not counting the copious amount of filler) comes to a grinding halt as well as the tedious descriptions and superficial/boring characters (especially some of the women), it doesn't deserve the title of best.
That being said, WoT is entertaining and is something special. Jordan created a tremendously complex and beautiful world full of magic, intrigue, politics, and war, and really started the the gray fantasy genre.
