Even more it is an essential part of a Phoenix-Avatar to be mortal, otherwise there would be no circle of death an rebirth.After all it depends on how much Jean wants to do her "Phoenix-Thing" or simply wants to be Jean. So she can be absolutely invincible or also vulnerable like a common mortal...it all depends on her mental condition and whether she has finished her "job" yet or not.
Since the "versus threads" are usually about the opponents being at full potential (if not stated otherwise), well...you can safely assume, that her body will be well protected.

In "Here comes Tomorrow" its clearly pointed out, that she has to heal [B]a woundet universe, not the woundet universe, and during the HoM crisis Rachel retreated to the WHR, the "home" of the Phoenix, from where one could see and experience all the different universes and all the different selfs that live there.

Not the healing of the universe itself makes Phoenix multiversal, but the fact, that she healed "a" universe instead of " the" universe in combination with the fact, that from the White Hot Room, THE "HOME" OF THE PHOENIX, even Rachel Grey and Psylocke were able to access all the different universes there are and their selves that live there.
