I agree with you to an extent. I just think this movie could be used to teach him that lesson so he wont repeat it in sequels.

Having him develop his non-killing moral code due to the guilt he feels when he did it one time [rings of Spiderman, more than Superman], and not due to his unique perspective on life and the sanctity of it is probably the worst decision they could have made.This 'creative' decision doesn't have much to do with developing Superman, as much as it has with a 'not the boy scout you thought he was, is he?' kid logic. Judging by the trailers, he kicks all kinds of ass, and he has the new 52 mentality - so the 'not a boy scout' part was already there. They didn't need to go the extra mile and have him snap the villain's neck, justified as it was. Because that's not what Superman is.
To each his own, though. I will never accept this.

The way I read it, it sounded like something more accidental than anything. In that he used more force than necessary to just turn Zod's head away from the people while he was HV'ing them, and Zod was obviously resisting that turn, and that tension may have caused the neck snap.

What I like the most about everything is how everyone involved respects and cherishes the character. From Cavill saying he was always a fan and reading his comics to get clues on how to properly portray the character(something he did not have to do since it was re-imagining and all) from Amy Adams saying she had a crush on Crhsitopher Reeves' Superman.
