To further X's analogy, Joey in his spin off (also titled "Joey"😉, moved to a different town to essentially start a series with the same feel that "Friends" had when it started. It felt like rehashed material that wasn't done as well and didn't have the same feel, partially because it was now around a mid/late thirties partier, instead of the mid-twenties character that helped to get Friends so much popularity.
It loses its feel, and that's what seems to be happening with Spider-Man. They need to work it and adapt, and they could have done so with Mary Jane.

Also, as one final comment-
It seemed almost pointless to have May take the bullet. If they were going to write out Mary Jane anyways (granted, she's still in the series, but hear me out), they should have had her take the bullet.
Parker could resign himself to his job in grief over her death, and then slowly overcome the sadness, but now as a completely solo Spider-Man, like how he began. Except that he's a changed character because of what he's been through, and he's older. It's just character progression, and Marvel would still have gotten their solo Spider-Man without the continuity mess.
Plus, Mary Jane would have had a more epic ending.
Toss her in the fridge?
