For one Supes has a weakness against magic and I feel that writer didnt touch upon it. This shouldnt have eluded you. Thor was shocked he cuaght it and lost mainly due to that fact imo.
Current Thor has a different attitude than classic Thor. He holds back less.

What a horrible misconception. In EVERY single instance that Thor has used the godblast, it's taken him quite a bit of time for the blast to "warm up" so to speak, plus he has to pray, etc. He has to do a myriad of convoluted pre-blast stuff in order for it to work. What's Superman going to do in the mean time? Stand there like the douche bag from Austin Powers yelling "NOOOOOOOOOOO!!!!!!!!!!!!!!!" for five minutes?Doubtful. We're talking about a guy who has the speed to rebuild an entire city in mere moments.
A godblast against someone like Superman would be a terrible mistake for Thor to make.

The very fact that Thor has to summon the Godblast is enough of evidence to me that he can't summon it before someone with super speed moves out of the way, out of the battle, or clocks him. nice try tho.

As to why he doesn't use it more there are a few things you neglecting.
1) Thor holds back a lot like Superman. Think about the times he has used it. Once on Galactus who is exceptionally powerful. Once on Juggernaut who is indestructible, and Exitar a freakin Celestial. A trend in this list is that these people can easily shrug of Thor's normal attacks.
In fact in the fight with Juggernaut, we see Thor using an ever increasing power level with his attacks as he sees the previous one was not working.
2) Thor is a versatile character. He isn't like Supes where people have to right him using the Godblast like HV. Thor's the kinda guy that can adapt his attacks to a particular situation. Why throw one gigantic beam of energy at a speedster when raining lightning from above does the trick better. Why use an energy blast when you can suck the energy right out of the person. Why try a beam at all when Thor can put them in an energy shield.
What none of this means is that he can not use his Godblast on speedy people. It's just that A) it would obliterate most of them, and B) He has better options to use. 😬
