For argument's sake, let's think the anime isn't non-canon. When are they ever said (in events that took place in the manga as well of course) to move at Light-speed, outside of the rather retarded dub errors? Barring IT which I don't consider "true" movement speed.

Well, in the anime, we have Captain Ginyu blitzing so fast that he turns to light and we have Goku blitzing so fast during the Cell game that he turns to light.
By the way, just look at the way DBZ characters fight and you'll learn a little something. The one main thing that you will learn is that people like Hulk, Wolverine, Kalibak, Darkseid, Wendigo, Shaggy man, Doomsday, Batman, The general, Konvikt, along with others wouldnt lay a finger on them and this is with CIS and PIS on. Without CIS and PIS on, Hulk, Wolverine, Kalibak, Darkseid, Wendigo, Shaggy man, Doomsday, Batman, The general, Konvikt, along with others wouldnt even see Goku in the fight while getting their a** whipped.

Well, we had black hair Gohun lifting a 300 passenger plane with one hand as saya man. We have Goku in the first episode of DBZ lifting one of the largest tree in his forest and carrying it back home with one hand.

If we are talking about the same interview then this statement never happened. He wasnt surprised at the things that they DID in the anime, he was surprised that they made it exactly like the manga fights. He thought that they werent going to make the fight scenes like he imagined it during making the episodes. He basically thought the artist was going to be a failure and he was shocked when they actually did everything right.

Not really, all that shows is that they are moving fast, not at light-speed 😐. You still need to prove they can move at light-speed ma boi.
'Turn to light'? Bull-crap. They never 'turn to light' in the manga. Oh noes!
