Due to spoilers in Ocarina of Time, Ganondorf was captured before ever getting the Triforce of Power, and never actually met Link or saw the Master Sword. He had no way of knowing who or what he was up against, because this was the first time he was up against them.

Actually, now that I think about it, TP is early in the timeline, and Ganondorf is pretty young there. He's much more intelligent after this point.
