At the end of the day, Sidious dominated Talzin in a saber duel with just a few strokes. Talzin was skilled and fast enough to hold her own against Windu, who is a peer of Dooku's under normal circumstance.
Sidious dominated only possessed Dooku's body, these are different things, when Talzin changed his appearance like she was against Windu, she matched with Sidious with her magic blast. Which she used that against Windu as well.
Remember what she said to Windu ; ''Your powers are no match for my magics...''
She used magic tricks against Windu. Not only sword skills. It seems she failed to use any magic power in Dooku's body. Since she was using Dooku's saber, instead of magic sword.

Her matching Sidious in a pure force fight has nothing to do with how she fared in a saber duel.
What magic tricks did she use against Mace other than blasting him with the same magic attack she used against Sidious, which Mace evaded? Also, what did her magic saber do for her other than allow her to hold her own against Mace in a saber duel?
You're also forgetting that she is more powerful on her world, and she had possessed Dooku's body during her fight with Sidious, which is something Sidious mentioned as a plus. She rushed at Sidious and got dominated and quickly disarmed.
You're not making much sense either. If you're trying to make sense of Sidious not dominating Mace the same way, well, Mace initially had back up, and was retreating from Sidious until completely immersed in vapaad, but the movie did depict a gap in speed between Sidious and Windu, which is why Windu couldn't capitalize on Sidious' distraction in cutting down other jedi, and why he was forced on the defense right after. Now maybe Talzin isn't as smart of a fighter as Windu (which is why she rushed and got dominated), but the fact that Sidious easily dominated someone who was able to hold her own and force a Windu level duelist on the defensive, despite Windu's aggressive style, is a very impressive saber feat for Sidious. Not to mention she likely had access to Dooku's force powers on account of possessing his body.

She was also intangible when the time she was fighting with Mace, in the end ritual failed and she lost powers again and weakened once more... How are you going to cut who is someone intangible ?
It seems after that failed ritual, she lost her intangibility power, which is gave advantage to Sidious.
Using Dooku's body and his curved saber, is not the same thing with using intangible body and magic sword. We don't even know the nature of that sword.
Its just wrong that comparing these situations... Talzin was using Dooku's body as a shield, while Sidious was trying to reveal her, she was already ready when the time she fought against Windu. Using some new body and some new weapon... Really ? Its really weird to compare these events...
She failed to perform any magic blast or any magic with Dooku's body, this is Dooku by the way... Controlling him can't be a easy job from the beginning...
