Yes, that is the statement, but then we have a god being affected by normal ki, showing it was not absolutely true.

It is pretty strait forward how you're ignoring the bit that, y'know, shows it to not be an absolute. Gods can be hurt by mortal ki, even if the amount used against them didn't do much.
If someone says "X cannot do Y," and then we see X doing Y, then it's silly to take the statement as an absolute truth rather than, y'know, X cannot normally do Y but if the gap is small enough such as Y being not fully charged, then it can.
