Didn't they specifically explain that he had more emotion than the typical Vulcan due to his human mother?
Spock's always fought to keep his human-emotions in check since ST:TOS, it's a defining character trait.
Prime-verse Spock notes that while younger Spock may appear in control, he's really emotionally compromised to the point of explosion due to Vulcan being destroyed and his mother dying, what Kirk takes and capitalizes on in the first film.

I was never questioning Spock's strength or fighting skills.
He is a person of logic & rational thought that's why Kirk re-instated him & considers him a good friend.
Kirk provoked Spock deliberately so his human emotions would take control. Spock lashed out. Kirk didn't fight back (from memory).
And yeah Spock wanting Khan's capture was also after Kirk died & once again Spock's anger was his motivation.
You're still missing the point that Spock isn't on the crew because of his fighting skills.
