Is Superman at this level of strength in most stories? Nope.
But in a VS. match to the death, Screwattack took Superman at his "Max Potential" not a random point in the timeline.
We've seen that the Max Potential of Superman, the high end, on panel has beaten beings like Dominus who can create entire realities, rewrite continuity, and slap around Eternity level beings like Kismet on panel. Superman's Willpower overpowered him. Heck Superman even contained the Bleed, which is even dumber than lifting Infinity.

Superman literally contained the interdimensional space where the Entire DC Multiverse grew out of. Ridiculous and even crazier than lifting Infinity.
Characters in Marvel and DC can do feats that go beyond Universal into Multiversal levels. Sometimes characters like GL Kyle Rayner may hold back a big bang (in the same arc it was shown he couldn't handle Imperiex Probes and was far below the power of Superman), or Orion will contain a Universe destroying bomb. The Hulk will collide with Betty Ross and destroy the dark dimension, Flash can absorb the entire speed force, Thor did contain a God Bomb that would kill all Gods in the 616, Wonder Woman's lasso broke and stripped truth from the entire Universe, Suprema lifted the entire Universe, Hercules lifted the heavens, and on and on.
In a normal showing for Superman and other top tiers these things aren't brought up in a typical vs. debate but Screw Attack takes EVERY high showing into account and puts the characters against each other at their maximum potential. And I think that's only fair since you would want them to use Goku at his maximum potential and not be held to just SSJ2 or something.
