Edit: oh and btw, Dooku blocks Kenobi's Saber first before choking him, so he was within striking reach. And yet Dooku was still fast enough to block both Kenobi and Skywalker's Sabers then Choke Kenobi before he could even react. So yeah he was definitely faster than Kenobi there, as he was on Oba Diah.

You ignore the context of Vos vs Dooku. You see one line that says he moved faster and you go on a field day with it. The line right after it says that Vos just barely managed to get out of the way of Dooku's attack. He wasn't winning through superior speed but rather unpredictability which Dooku couldn't assess and take advantage of as Makashi calls for.
