We can come up with many explanations, truth is writers simply don't give a crap. Wolverine's met with Carnage like 3 times and each time it was their first meeting. Discovered Spider-man's secret identity..twice. So both fights with Shang can be canon.

K. If that makes you feel any better Wolverine might take few wins vs Otto-controlled Spider-man who has zero experience with the powers and even less ma/fighting skills. Real Spider still wrecks him though. Oh and for the record, last time Pete fought Speed Deamon he speedblitzed him. Definitely beats playing an ultimate slightly aggressive punching bag which was Wolverine's whole strategy.
