It is simple, actually. Peak human in fact refers to body condition. But there is also body mass and (in case of peak human constitution) proportional muscle mass.
So, two men can be both peak humans, but if 1 of them has more body mass, he is stronger. And more durable, possibly.
That's why there is no contradiction in Fisk being stronger then Rogers, even if they both are "peaks".

Umm, 127 martial arts? Can anyone actually name over 40 martial arts ...

This fight would end the same way as the other times they have encountered each other...........with a talk.

Otherwise, 50/50. No way to call a clear advantage for either.

Both have moves that can take each other out 5/5 split.

If I had to pick a winner I would give Cap 6/5 , only because he has the advantage if the fight last a long time. Assuming they actually fight , and not talk and try to reason .

I think it would be similar to the cross overs.

They both acknowledge each other's skill and they have a mutual respect, but if their was no way out without a fight; Cap would win in my opinion. Not by a landslide, though. But eventually. But if nothing was at stake, it would be too close to 50/50 to call. And it'd be more than likely settled with a talk.

not all martial arts are created equally, and guys like wolverine, batman, daredevil, and captain america only use their vast array of arts rarely, they usually only have to stick with a combo of 3-5 tops.

for example, by looking at batman's style he uses ninjutsu first and foremost, judo, and krav maga. wolverine uses some ninjutsu, his unique blade fighting technique (blades out), and some kenjutsu.
captain america sticks with judo, his own creation of synthisizing expert acrobatics with kickboxing, his unique shield fighting art, and american boxing. dd uses ninjutsu almost exclusivly, but classically he had a mixture of boxing and ninjutsu, but the later increased to the pion where it is his dominant form.

it's the job you do that governs what art is used in a specific scenario.

The writer stated in the crossover that Batman was admitting Cap was better.

Cap's since he's about as skilled but his stats tips him the favorite. Seriously guy has strength feats that are better then even Slade.

Despite Cap's physical advantages, Batman turns it up a notch under these circumstances and makes this close. Unfortunately for Batman, Cap also turns it up a notch.
