ROTS novelization and then it's also in some EU material. Yoda is the greatest Jedi up to this point. It's pretty much easy to realize Yoda would take Windu. If he can match Sidious on his own merit with no such boost, while Windu needs one to contend, it's obvious Yoda would be better.

Well in the novelization Yoda also did disarm Sidious, and in the movie as well as proven by the script, so... I retain the argument Yoda is better since he could disarm Sidious without the need of a boost. Yod's size in an advantage as well. It makes him a harder target to hit and a ball of speed.

All maul did was beat Qui Gon Jin who just going by the movies had no feats. Dooku beat the better Kenobi with ease with his saber while Maul didn't, defeated Anakin, held his own against Yoda and lived, then in ROTS held his own agisnst the better version of both Anakin and Obi wan at the same time, and defeated Obi wan without Dun Moch, and was able to hold his own agaisnt Anakin's strength which his form is weak against.
So yea that's plenty to put Dooku above Maul.
If you mean Yoda then all you need is his battle with Sidious and compare the two. Yoda disarmed Sidious while Maul didn't enough said.

Cause Windu won't receive the same boost he did in that fight. The dark energy coming from Dooku isn't nearly as much as Sidious, and the hatred mace has, is mutually not as large. Dooku is also more controlled and calculating then Sidious who wouldn't let his emotions get the better of him like that.

I am debating in pure canon, Windu is a middle aged male in his prime while yoda is 800 years old.
Windu is fast enough to keep up with palps, him and palps were moving so fast Ani could not even seen them iirrc.
Windu has the speed, the age and the height, reach advantage, all of which matter in a sword fight.
Windu took down Sidious with easy, while Yoda could not get the job done.
