GE has more member planets, more military strength (even if it's non-Force user. How well is a mook Sith going to do in space combat among destroyers?), and a technology creep. Although much of SW is on a kind of tech plateau, everything points to OT era being that much better than say, KotOR era, which is closer to TOR. 300 years versus thousands.
However, in a ground engagement among Force users only, the GE is starved and would lose horribly.

Yoda is obviously one of the most respected masters of all time, being a benevolent teacher and leader in a time of prosperity. He also has the distinction of being the last leader before the Jedi Order was obliterated, which is not a great distinction, but a distinction nonetheless. Despite his many failures, I think he has some really awesome facets of his personality, which Dark Rendezvous showcased very very well. Far better than the PT movies did, sadly.
Odan-Urr contributed greatly to Jedi success during and mostly after the defeat of Naga Sadow in the Hyperspace Wars, and pioneered a lot of Force techniques, some perhaps lost to time, that no doubt transformed the Jedi. His library, had it been maintained, would likely have been the Jedi equivalent of Malachor V or more.
Satele Shan has distinction in her resistance to the Sith Empire of Vitiate, but let's face it; that Empire was already running stagnant and Revan was undermining it from within. Shan also did some amazing things in the books, but I can't remember them at this point.
Bastila is instrumental in the reversal of the steamrolling Revan provided to the Republic, and is canonically perhaps responsible for his personal reversal as well. She also had an impressive lineage.
Mace Windu is a Jedi Master among Masters, having invented his own style and shown a level of power and control beyond his peers. It's a pity Sammy Jackson plays him with the charisma and dexterity of a vending machine.[/list]
Among Sith, the list is longer, because Sith are noted for creating eras or epochs. I couldn't narrow down the list much without a lot of time on my hands.
My own Jedi list would be:
Odan-Urr - For the reasons Janus described as well as for revising the Jedi code and generally being highly influential.
Revan - Defined the Kotor era and was the most important figure in it as a Jedi in the Mando Wars, a Sith in the Jedi Civil War and finally as his amnesiac self in Kotor. Went on to play a pivotal role in influencing Vitiate into making tactic mistakes and being overly cautious. Were it not for him the Republic would be dead.
The Exile - Defeated the triumvirate and saved the Jedi Order from complete destruction in its darkest hour.
The Hero of Tython - Saved the Republic and many of its planets from obliteration and then saved the entire galaxy from Emperor Vitiates ritual.
Yoda - What Janus said.
Luke Skywalker - Duh.
Cade might also be on here but I dunno about what his contributions were exactly and bluh.
I considered Obi-Wan but most of his contributions revolve around his actions to do with more important figures than himself.
A lot of big name Jedi deserve credit. Any list will likely leave someone out, unless it is ceaselessly researched. Obi-Wan deserves a kudos, Anakin does in his own twisted way. Etc. etc.
Now the list of Jedi I like is much smaller, because some Jedi are just boring. I thought the Jedi storylines in TOR were boring as hell too.

I thought the Consular story was really interesting myself. Dealing with the history of the Force Wars on Tython was fun, like finding the first ever lightsaber to be your personal weapon, talking to and redeeming the first Dark Jedi etc. It was really neat.
Then the Act 1 mystery plot of Vivicar was one of the more interesting Act 1's in the game imo. Dealing with the Jedi Masters was ok, and piecing the puzzle together intrigued me. The final confrontation with him was very well build up too.
Finally, the Rift Alliance and Children of the Emperor plotlines were great too. Its surprising, I'd been told the Consular storyline was shit, but its one of the better ones imo.

I admit it's better than the Jedi Knight storyline, but it paled in comparison with the Sith Inquisitor or Imperial Agent storylines. Also, Coruscant is the most agonizing questing area I've ever seen in an MMO. Halfway through I wanted to claw my eyes out. A lot of the planets are just grind-fests, which is why TOR sucks, but Coruscant stands out in my mind as just horribly done. So much potential wasted. I hated that part of the story for any character.

Different strokes I guess. Act 1 SI was one of the worst acts in the game for me. Just tedious errant boy shit, though all the stuff to do with your legacy was epic. Then the whole class storyline after that was just a huge power fantasy. In all it was fun, but lacking in substance.
I liked the JK storyline cuz I got into roleplaying the character, even if the plot was shit.
I'm rather partial to the Smuggler story too. Its really amusing.
The BH story is good just cuz I ****ing love Mako. She is my waifu.

There's a traitor among the Jedi doing terrorist attacks. Ashoka gets framed (who is good friends with Barriss), then Barriss ends up being the traitor. She's disgusted by the Jedi leading the war. It all ends in a confrontation between Skywalker and Dark Side Barriss.
Skywalker of course wins, but with some difficulty. Dark Side Barriss seemed pretty bad ass.
