That's one that I don't think anyone really thought about.

If the past can't be changed, but things are playing out differently then that means they are creating alternate timelines. It's that simple. Also " the present you left becomes your past" is meaningless rhetoric that explains almost nothing and can be true for most forms of time travel.

I'll try and describe it as best I can from my limited understanding of quantum theory as it relates to time travel.When they figure out how to do it and break into teams to go back to different points they can't change what they've already done up to that point in that shared "present". That means they each create a different time thread from the moment they go back. The issue they had to solve wasn't simply travelling forward in time as that would mean they would all end up in a separate "present" based on what they did when they travelled back. They had to figure out how to all get back to the same present they all left. They did just that.
Loki stealing the tesseract and escaping only changes the present in that timeline but that's not the one they left or met back up in because they change the past they've already lived
When Cap travelled back from that shared present he only changes his own life because his actions don't change their past or even his own up to the shared present that he existed in before he went back in time. That's why he didnt alter anything from their perspective. Because he can't change the past he's already lived even if that's in the future from his new perspective. The only thing I can't figure out is how he ends up in their shared present without returning via the Pym particle machine as even if he lived to be old he should be in a different present from them even if he goes back to the same place and time.

That's my understanding of how time travel works in this film as well. My issue is the very flaw you pointed out in the final paragraph, Cap should be living in a different timeline and therefore should no be able to meet up with Falcon and Bucky unless he uses the Pym Particle machine to return to the original timeline. Since he didn't use the machine (if he did he would have returned when Hulk flipped the switch) that means he was in the original timeline all along which is inconsistent with the rest of the film.
