As far as I know in the movie canon there's no evidence that learning to use the Jedi Mind Trick is vastly more complex, if at all, than learning to deflect blaster bolts.Additionally it is possible are things that some Jedi are more inclined to anyways. Perhaps Rey takes particularly easily to mind tricks.
Regarding Kylo

The more I think about it, the more I think the important thing regarding his power level in the movie is the wound he has sustained. Basically all of the feats he performed in the final battle hinge on that wound. If it was a minor thing then yes, his ability is surprisingly weak, if it is however, which I suspect, a very severe wound, perhaps life threatening to any normal person, then we can not judge his level at all accurately from the fight.A question, because I currently don't remember, did Kylo get hit by a standard blaster or Chewbacca's considerably more powerful crossbow?

Maybe, or maybe not. Rey was told that the force was real, that the stories she knows are real, perhaps she was very familiar with a Jedi Mind Trick story and tried that out, needing a couple tries, the same way Luke needed them for the deflection.Really, this part of the lore is just not set in the films, so we can assume either way.

She knew about the Force and force powers already, was told she was strong in the Force and had gotten her power kickstarted by Kylo when he tried reading her mind.Also EU readers should be familiar with uber powerful but untrained force users pulling out impressive uses of the Force by instinct. It happens all the time. Its hardly that egregious compared to Zannah ****in flying or something.

I honestly had no problem with

the mind trick. my only real gripe was her being able to take down Kylo, injured or not.

while I don't think she's Luke's daughter, I wouldn't be surprised if she was, and Luke had pulled an Obi-Wan, hiding her on Jakku so Snoke couldn't find her etc.
