I'm just the opposite. I think writing characters and stories where you -0 you as in the "consumer of the story" - have to fill in information is lazy writing. I've never liked it.
I enjoy origin stories, for the most part. I also enjoy wrapped up stories: not half-ass writing that pretends to be "smart" by just simply not finishing the story.

I disagree: I would love a Sidious origin story. Maul? Not so much. But I would still watch the f*** out of a Maul origin story. 🙂

He was fleshed out in clone wars series. I always loved maul so I'm game. I couldn't give a shit about boba fett personally.

I never understood the Boba Fett fan wanking. There's nothing remarkable about his character. In fact, a much better case can be made for him being an over-exaggerated bounty hunter that had lack-luster skills (movies only).

Well, I think the big deal was in the mystique of the character. I know you already stated you aren't a fan of that, but hear me out.
Here's this dude who looks badass - a helmet visage comparable to Vader. He cradles his rifle like Clint Eastwood in the Dollars trilogy, and among a chorus of the greatest galactic bounty hunters - is expressly pointed out to Vader who has to tell him not to VAPORIZE one of the main characters. His voice at the time was grizzled, rough. Irritated. It was beneath him to nearly respond.
His ship was badass, he blasts at Luke and takes Han to one of the biggest crimelords around.
Admittedly, his death is awful.
But the character - what little we saw - was intriguing. It's what caused people to be interested in him in the Expanded Universe to begin with.
